Instant Germinated Pulses
Introduction
Germinated pulses are highly nutritious and contain two-times more vitamins than the ungerminated ones. But the germinated pulses have limited shelf life of 12-24 hours and the process is time consuming. The Laboratory has developed a novel method for the instant germinated pulses such as bengalgram, greengram, peas etc., which cook within 5 minutes retain maximum vitamins and is stable for more than 12 months at room temperature. The product has immense domestic as well as export market potential.
