Introduction

Value added products were developed from raw as well as ripe palmyra kernel. Palmyra fruit bar was prepared from ripe pulp with natural flavor of the fruit in a concentrated and shelf stable form having microbial stability. The product has a soft and leathery texture. Minimally processed (MP) product with syrup was prepared from tender kernels and hurdle technology stabilized kernel was prepared from mature kernels. The infusion of additives prior to packaging in steep solution facilitates retention of fresh like additives within the kernels. The hurdle technology based product had been stabilized to ensure a shelf life of 4 months under ambient conditions. MP product was shelf stable upto 2 months at low temperature. A rich composition in terms of minerals, fibres and carotenoids makes the product suitable to be included in the category of health foods.
