Edible Soyaflour
Introduction
Soyabean is cultivated in India in the states of Madhya Pradesh, Uttar Pradesh, Maharashtra and Andhra Pradesh. It is reported that 80% of the production of Soyabean is from Madhya Pradesh. Soyabean is a rich source of protein apart from its oil content. It is an excellent raw material for a number of fabricated foods with desired texture and flavour. Full fat soya flour can be manufactured on a small scale with pre-treatment of the beans in soyabean growing areas. Soya flour is extensively used in the preparation of meat, cereal flour and other ready-to-eat products, instant mixes as extenders, food drinks, baby food, confectionery, candy products, special diet-foods, high protein soups, protein concentrate and food additives.
Edible soya flour is being manufactured in India by few units. Still there is good scope for its manufacture in rural sector. The potential markets for soya flour are: in school feeding programme, social welfare feeding programme, confectionery industries, baking industries, for nuggets and chunks manufacturing, as a supplement for wheat flour.
The preparation involves operations like, rinsing seeds in water soaking it over-night, cooking (to destroy the urease activity), draining excess water and drying upto a moisture level of 10%, dehulling and powdering.
The equipments needed consist of roaster, fire wood chula, cooker, tray drier, dehuller and pulveriser.
