Cold shock Drying Technology
Introduction
Large size pieces of potatoes, carrots & other vegetables can be dried using cold shock dehydration. Cold shock dried vegetables retain their colour during extended storage and reconstitute readily in warm water in just a few minutes. Such cooked vegetables can be suitably mixed with a curry concentrate or garnish mix or instant choley mix to deliver a ready to-serve potato/potato-choley curry in no time.
