Introduction

India is well endowed in aluminium with large reserves of bauxite. Although aluminium cans are widely used for beer and certain other beverages, its use in thermal processing of foods is not as widespread. DFRL has developed the necessary technical know-how for the thermal processing of various foods such as meat, fish, fruits and vegetables etc., in aluminium cans. The technology is in the form of a package deal to provide details of processing conditions and retorting schedules. The shelf life of foods in aluminium can is similar to traditional tin cans.
