Light Chocolate, Not Dark

The lighter the colour of cocoa powder, the better it is, said scientists from the Hershey Company, an American chocolate maker, and Brunswick Laboratories of Norton, usa. The scientists analyzed Hershey's Natural Cocoa Powder and 19 other cocoa powders and found that natural cocoa powders have the highest levels of flavanol antioxidants-34.6 mg of flavanols per gramme of cocoa powder. Flavanol is good for health as it prevents coronary diseases. Alkali treatment of cocoa, or dutching, used to lower bitterness and darken the colour of cocoa powder, also lowers its flavanol content.
