The process involves collection of caecum from the slaughter house. Storing in an ice bucket and transportation to the processing centre. Removal of serosa layer from caecum, salting the material, followed by preservation in a freezer. Then serosa membrane treatment with non-ionic wetting agents solution at 37 degree C.Treatment with alkali at ambient temperature, washing with water, enzyme treatment at 20 degrees C. Then deactivation of enzyme, pH adjustment, crosslinking with BCS, finally sterilization and ampouling.
