Instant Pickle of Mango and Lime

Introduction

Instant pickle, the dry mix of pickle is an adjunct food product of convenience and readily be used in place of traditional pickles. It is a new concept over the traditional pickle which needs elaborate, laborious and time consuming process to prepare and preserve. CFTRI has standardised the method for making instant pickle mix of lime and mango which can easily be reconstituted into a tasty pickle by the simple addition of oil and water. The dry mix has the salient features of convenience, better keeping quality, relative low cost of production, reduced packaging and trasnportation cost. The ever expanding market for pickles, both of domestic and export, can be fully exploited by adopting suitable market strategies. The main raw materials required include raw mango, lime/lemon, dry salt, spice mix and packaging material.

The process is simple and consists of selection of fully matured commodities for pickling, washing and cutting into suitable sizes, brine curing at optimal conditions, drying suitably in sun or mechanical drier, addition of dry spice mixes and packing in unit packages. The product after mixing water and oil and kept overnight can be used readily. The equipment needed for processing include drier (optional), S.S. vessels, roasting pan, spice grinder, heat sealing machine and other handling gadgets.
