Introduction

Legumes such as kabuli chana, rajama, dry peas etc., are often a part of our vegetarian meal pattern and provide liberal doses of protein in the diet. However, they take inordinately long times to cook even in pressure cooker after overnight soaking. The Laboratory has developed a novel innovative technology to instantise such cooked legumes wherein they reconstitute within 3-5 minutes of simmering in hot water. With suitable garnish mix, they can be used to chum out instant legume curries.
