Introduction

Any food entailing muscle proteins takes inordinately long time to cook even when pressure-processing is resorted to. Besides, traditional Indian and sub-continental mutton preparations encompass a paraphernalia of kitchen operations which again take a long time. This delightful comminuted mutton preparation is an excellent answer to elaborate traditional kitchen drudgery and gets ready in 10 minutes. It has in its formulation minced cured mutton, characteristic blend of spices and condiments and oil hydro. It can serve as a base material for a host of other mutton based non-vegetarian dilicacies such as mutton cutlet, mutton kofta curry, mutton keema, mutton patties and so on. The natural goodness of the product is retained best when it is packed under vacuum. The technology is simple and easily adaptable at commercial scale. The product is required to be simmered in boiling water for 10 minutes for reconstitution before serving.
