Introduction

Chapaties are important component of Indian meals and relished through out India. Imporved preserved chapaties with better taste and texture and sensory characteristics with reduced concentration of permitted preservatives were developed. The product is stable for more than one year under ambient conditions and useful for pack meals, institutional feeding and ration for armed forces.
