Introduction

Protein chewy candy is a product, which is similar to milk chocolates. In this product, the milk solids are replaced (partially or fully) by the vegetable protein isolate or edible quality, soya or groundnut flour. This chewy candy is nutritious and contains about 12-16% protein. It can be a good protein supplement source especially for children and the aged. The protein chewy candy has the market potential, as in the case of hard boiled sugar candies, chocolates and other confectioneries. The protein chewy candy manufacturing units can be established in selected rural areas. The raw material required are edible quality solvent extracted flour of soya or groundnut or protein isolate, liquid glucose, condensed milk, vanaspati, flour and permitted colours and packaging materials.

CFTRI has developed a process for the production of protein chewy candy. The process consists of mixing of ingredients with sugar syrup and cooking. The cooked mass is then subjected to operations like plating, rolling, cutting, wrapping and final packing.

The equipments needed are firewood chula, SS vessels, wooden stirrer, stainless steel roller, candy cutter, twist wrapping machine, cooling table with water circulation, weighing balance, etc.
