Introduction

Molasses is a by-product of the sugar industry. In India, as in other countries of Asia, Africa & Latin America, molasses is used to produce alcohol by a process of fermentation using yeast. Conventionally at the end of fermentation the broth has around 6.5 to 7.5% alcoholThe process being offered comprises of a Osmotolerant High Alcohol Yeast along with associated fermentation and distillation technology such that it can produce a broth with 10.5 to 12% alcohol with high efficiency and good productivity. When this broth is distilled there is a saving of 15 to 20% in the requirement of steam for distillation. This offers considerable economy to the process of manufacture of alcohol.
